Le Cellier Steakhouse is a very popular restaurant located in Canada in Epcot’s World Showcase. The design of the restaurant resembles a wine cellar with bottles of wine stored behind glass and in wooden spaces in the walls. Le Cellier means “the cellar” therefore there are no windows in the restaurant, but the stone walls and low, warm lighting help create a dark and romantic atmosphere.
The different provinces of Canada are represented in the different seating areas as your host or hostess will explain to you when you are seated. The menu offers many wonderful steak dishes as well as the famous Canadian Cheddar Cheese Soup. Having a cup of that soup is a must for me each time we visit this restaurant and we’ve even gotten our hands on the recipe and made it at home! It was good but of course the real deal is always better. Want to give it a try? I asked our server for the recipe back in July 2007 and he gave me a recipe card titled “Epcot at Walt Disney World: Recipes from Around Our World” with the recipe on it.
5 cups milk, warmed
1/2 lb. bacon
10 tbsp butter
1 cup celery
2 each red onions, finely chopped
1 1/2 c. flour
1 quart chicken stock
1 lb. cheddar cheese, shredded
kosher salt to taste
freshly ground black pepper, to taste
1 1/2 tsp Tabasco Sauce
3 tsp Worcestershire Sauce
12 oz. slightly warmed ale
Slowly heat milk. Brown bacon first, render until crisp. Add butter and melt. Add celery and onions, cook until translucent. Add flour and mix thoroughly to form a roux. Add chicken stock and simmer for 3 minutes. Add warm milk and stir vigorously to thicken. Cook out roux until thickened (should not have a starchy taste). Reduce heat to low, add cheese, stir until melted. Season with kosher salt, black pepper, Tabasco, and Worcestershire Sauce. Just prior to serving, add warm ale. Garnish with cooked bacon and fresh chives.
Cook’s note: When re-heating soup, do not bring to boil, as it will break down.
